This griddle is lighter weight than a cast iron griddle so it is safe for use on ceramic and glass top stoves, as well as, electric and gas stove tops. It is not induction compatible. Unlike cast iron, which requires a pre-seasoning process, our cast aluminum griddle is non-stick coated and only a small amount of oil or butter is needed to prevent sticking. Because cast aluminum heats evenly and quickly, a low or medium heat setting is all that is needed for great results. Overheating our griddle or heating it without food can damage the non stick surface and warp the pan. Clean the griddle with mild soap and a soft cloth after each use and never use metal utensils or abrasive cleaning products, which will scratch the nonstick surface of the pan.
